6月22日 咖啡拉花體驗工作坊

要製作咖啡拉花,當然要有咖啡!咖啡需要用意式咖啡機,加上即磨咖啡豆做出來的濃縮咖啡(espresso)。而要拉出美麗的圖案,牛奶一定要綿密,有微細的,如天鵝絨般又厚又滑的泡沫。兩小時的基礎課程,你將會學習基本濃縮咖啡製作技巧,蒸煮牛奶及打出綿滑奶泡的秘密,認識徒手及雕花兩種不同的拉花技巧,並親自實習拉出基本圖案。

6月2日 咖啡品嚐工作坊

地點: 觀塘巧明街106號冠力工業大廈15樓2室
收費:
每位HK$180

們將品嚐三款來自世界不同國家地區的精品級(80分以上)咖啡,包括:

  1. Ethiopia FTO Dry Process – USDA Organic & Fair Trade Certified(埃塞俄比亞有機及公平貿易日曬豆)
  2. Indonesia Organic Flores Wet Hull Bajawa(印尼火山島有機咖啡)
  3. Guatemela Acatenango Gesha(危地馬拉藝技)

不同的產區,水洗及天然日曬的不同處理方法,都會令咖啡豆帶有不同的味道。咖啡可以有水果味,巧克力味,泥土味,煙薰味…每個產區,每種咖啡都有自己的起源和故事,我將帶你的味蕾去旅行。為了品嚐咖啡的真味(不是牛奶或糖漿品嚐班呵!),有心理準備不會有牛奶或糖供應,只飲黑啡。

咖啡農知否產品為何獲獎?

十二月份,首爾已入隆冬。街上寒風刺骨的感覺,相信居於赤道兩旁咖啡種植帶的老友們不常體會。這晚,我們選擇了傳統韓國燒烤作晚餐。

「其實咖啡農知不知道我們所追求的咖啡是什麼?他們又知否自己為何獲獎?」

這條問題,我年前也曾問過。今次提出的,是隨烘焙公司老闆同來的一名咖啡師。喜歡咖啡,通常由下游開始:先愛喝,後愛。當中一部分人涉獵選豆烘焙,開始中游的事業。有少數甚至變成植物專家,拾起鋤頭,以種咖啡為退休的寄託!傳奇的巴拿馬翡翠莊園,莊主是一位原本只想覓地退休的美籍神經化學系教授。

Sustainable Coffee Forum #1- Ethical Consumption

So, in order to raise awareness of ethical coffee consumption and encourage dialogue between stakeholders in the coffee industry, we hosted our first event on 12th January 2013 at iBakery Gallery Cafe. 24 people from different sectors, including NGOs like Fairtrade, charity organizations, coffee trainers, coffee consultants, buyers, importers, attorneys, traders, journalists, consumers, leadership training coaches & a veterinarian.  A short talk by Danniel J. Groshong (founder of the Hummingfish Foundation) is inserted after the 2nd round of discussion to inspire more ideas.

Awakening the Addict…. Should I, Shouldn’t I

I love coffee and I’m committed to making a difference, and to creating a better world. So it seems obvious to combine these passions. I asked myself this question… ‘How can I use my love of coffee, maybe even my addiction, to make a difference?’

As a conscious consumer I recognize that in every purchase I make I’m supporting not only a business, but a long series of businesses. I am supporting their values, beliefs and behaviors. Without my financial support they would not have a business.  I get to decide which business models succeed, and which fail. Of course I can’t do this alone, but that doesn’t change how I decide to make, or from who I purchase.
