【技術分享】2016 世界手沖咖啡冠軍

2016年 World Brewers Cup 冠軍,來自日本東京 Coffee Factory 的咖啡師 Tetsu Kasuya,他也是2015 Japan Aeropress Champion 冠軍!

沖煮方法:
Tetsu Kasuya 用了一個 “4/6” 的方法,他用20克咖啡,並將總沖泡水量(300克)分為120克(40%)和180克(60%)的分段沖煮水量。首120克分兩次注水,其餘的注水則沒有限制。首120克決定了咖啡的的酸度,甜度和風味的平衡,及後的180克決定了咖啡的濃度。
